Bhutanese cuisine is simple beyond our conception. Our guide told us that most Bhutanese only eat meat once a week. That reduces quite a bit of carbon footprint! Since meat is quite the rare treat, the meat dishes are pretty well-honed.

The maroo is a perfect combination of fresh ingredients, seasoned judiciously with lots of leeks, garlic, red onions and ginger and laden with green chillies that never decimate other flavours. This bjasha maroo we have recreated is possibly the most befitting introduction to a little-known and often-misunderstood culinary world.

Boasting of a soul-nourishing broth, it represents the simplicity of the Bhutanese cuisine, often made only with local and seasonal produce. Speaking of local, the Bhutanese red rice has got to be the gem of my meals! I have added this beautiful and healthful staple into the stew, making it light in taste yet satisfying. This stew is easily one of my favourite creations!

Ingredients: Chicken stock (water, chicken bones, salt), marinated chicken thigh, Bhutanese red rice, spinach, tomatoes, carrots, green chillies, red chillies, red onions, ginger, coriander, leeks, garlic, bay leaves, chilli powder

Condiment: Ezay* (chilli salad with feta cheese, red onions, coriander and thingey) *contains dairy
