Some soups simply stay, so special in their own way. My childhood friend’s mother used to make corn soup with sausages for us when I went over to their place. I miss it! Here’s my vegetarian version with smoky Quorn mycoprotein sausages and soy milk with a drizzle of truffle oil. Fabulous and nostalgic.
Ingredients: Vegetable stock ( water, onions, carrots, leeks, black peppercorns), soy milk, Quorn mycoprotein (contains egg white, wheat flour, barley), corn kernels, carrots, orange sweet potato, onions, red onions, leek, spring onions, corn starch, garlic, ginger, sesame oil, salt, sugar, mushroom seasoning
Condiment: Garlic aioli, truffle oil
