Inspired by fond memories of my Aussie boarding school days tucking into Sunday roast dinners with roasted root vegetables, notably the humble pumpkin. Nothing beats the comfort of a good bowl of roasted pumpkin soup. Blended with tart granny smith apples with dashes of a spice blend, it hints of sweetness with the uplifting warmth of the spices.
