Hearty Vegan Gumbo (KETO SERIES)

I made my first gumbo with spiced whole chicken, coated with flour, deep fried then cooked in a peppery stew. Yummy but a tad unhealthy! So here’s our healthier version, made vegan and keto-friendly, thickened with coconut cream. Call it a thick stew or a hearty soup—either way, it’s so flavourful & unique!
Ingredients: Vegetable stock (water, carrots, celery, onions, black pepper, bay leaves), white radish, jicama, long beans, whole peeled tomatoes, eggplant, green bell pepper, red bell pepper, button mushrooms, round cabbage, lady’s fingers, coconut cream, cauliflower, zucchini, beancurd (tau kwa), tomato paste, garlic, Tabasco sauce, smoke liquid, mustard powder, garlic powder, spring onion, chilli powder, coriander, salt, thyme, oregano.
Condiments: Spring onion.
