Beef Curry British-Style

Curries vary much in their style between and within countries. I was particularly curious about the Indian curries at London’s Oriental Club, helmed then by Chef Richard Terry. Merging Terry’s style with Indian and French methods, we made ours with homemade curry powder from a bright array of spices, loaded with split peas and vegetables!
Ingredients: Beef stock (water, beef, onions, carrots, black pepper, bay leaves), marinated grass-fed beef, potatoes, carrots, tomatoes, cauliflower, zucchini, cream, chickpeas, onions, tomato paste, housemade curry paste (ground turmeric, ground coriander, chilli powder, cumin, cardamom, cloves, garlic powder, ginger, salt, sugar), corn starch, balsamic vinegar (contains sulphites), ginger, garlic, mustard seeds.
Condiments: Desiccated coconut flakes, mango chutney, yoghurt, papadum.
