Bhutanese Beef with Radish and Mushroom Stew

My first lunch in Thimphu was at a modest restaurant. It was incredibly cold and nothing was more comforting than sips and slurps of the luscious beef broth! I recreated the warming dish with white radish, mushrooms, green chillies, cellophane noodles and peppercorns. Certainly not your usual beef broth!
Ingredients: Beef stock (water, beef, carrots, leeks, black pepper, bay leaves), marinated grass-fed beef, white radish, potatoes, carrots, tomatoes, oyster mushrooms, shiitake mushrooms, French beans, green chillies, red onions, garlic, ginger, leeks, unsalted butter, cellophane noodles, salt, sugar, coriander, Szechuan peppercorns
Condiments: Ezay (chilli salad with feta cheese, red onions, coriander, thingey)
