Bjasha Maroo (Bhutanese Spicy Chicken Stew)

Bhutanese cuisine is simple beyond conception. This maroo boasts of a soul-nourishing broth, seasoned judiciously with leeks, garlic, red onions, ginger and green chillies.
I’ve also added the healthful Bhutanese red rice into the stew, making it light yet satisfying. This stew is easily one of my favourite travel-inspired creations!
Ingredients: Chicken stock (water, chicken bones, salt), marinated chicken, red rice, spinach, tomatoes, carrots, green chillies, red chillies, red onion, ginger, coriander, leeks, garlic, bay leaves, chilli powder
Condiments: Ezay* (chilli salad with feta cheese, red onions, coriander and thingey)
*Ezay contains dairy and chilli.
