Budae Jjigae literally means “army stew”, a Korean dish born out of necessity when the only accessible items were surplus food from U.S. military bases. To make this stew vegetarian-friendly, I’ve loaded it with crunchy vegetables, shiitake mushrooms, beancurd and Quorn’s meat-free sausages! Enjoy this meat-free, guilt-free soup treat!
