Budae Jjigae literally means “army stew”, a Korean dish born out of necessity when the only accessible items were surplus food from U.S. military bases. To make this stew vegetarian-friendly, I’ve made it loaded it with crunchy vegetables, shiitake mushrooms, beancurd and Quorn’s meat-free sausages! Enjoy!

 

Ingredients: Vegetable stock (water, carrots, onions, leeks, herbs), Quorn mycoprotein (contains egg white, wheat flour, barley), napa cabbage, carrots, white radish, lotus roots, leeks, shiitake mushrooms, enoki mushrooms, beancurd, miso, soybeans, soy milk, onions, garlic, ginger, corn starch, soy sauce

Condiments: Toasted white sesame seeds, spring onion, chilli powder

Allergens: Contains egg, soy, sesame & gluten. Cooked in a factory that handles milk, celery, crustaceans, fish, nuts, mustard & sesame. Contains mycoprotein, made with a member of the fungi/mould family and is high in protein and fibre which may cause intolerance in some people.
