I was smitten with the earthy and smokey flavours imparted to the simplest fare with the Kiwi’s hangi method of cooking during my travels in New Zealand. Kumara is Māori for sweet potato and the small, but mighty tuber is undoubtedly the standout ingredient— puréed and blended with pears, chickpeas and caramelised onions into a vibrant, luscious broth with a hint of sweetness.

Ingredients: Vegetable stock (water, root vegetables, herbs), roasted kumara (sweet potatoes), roasted pears, potatoes, chickpeas, onions, ginger, garlic, balsamic vinegar (contains sulphites), salt, sugar, turmeric, paprika

Condiment: A dollop of natural yoghurt with spiced chickpeas
