Nanny’s Javanese Opor Ayam

My children’s nanny was away on a long-awaited family visit. We missed her and her cooking so much! My daughter particularly loves her Javanese non-spicy chicken stew, braised in coconut milk with candlenuts, kaffir lime leaves, turmeric and lemongrass. This soup draws inspiration from her traditional recipe, with tempeh and eggplant. Nostalgic!
Ingredients: Chicken stock (water, chicken, carrots, onions, leeks, herbs), marinated chicken, potatoes, carrots, zucchini, cauliflower, leeks, tomatoes, coconut cream, beancurd, French beans, eggplant, tempeh, sharksfin melon, round cabbage, vermicelli, shallots, candlenuts, ginger, galangal, lemongrass, turmeric, white pepper, daun salam, kaffir lime leaves.
Condiments: Homemade chilli, chopped Chinese celery leaves, fried shallots, lime wedge.
