There is a Japanese expression affectionately known as ofukuro no aji—it evokes simplicity and usually refers to a home-cooked meal prepared by a loved one. Nikujaga, a sweet and savoury stew, is an iconic comfort food synonymous with Japanese home cooking. This is my version of a hearty Japanese beef stew with wasabi to add heat and impart warmth, just like mom’s cooking!

Ingredients: Beef stock (water, beef, onions, carrots, black pepper, bay leaves), marinated grass-fed beef, potatoes, carrots, white radish, cream, chestnuts, onions, shiitake mushroom, bunashimeji mushroom, oyster mushroom, enoki mushroom, leek, snow peas, wasabi, soy sauce, homemade teriyaki sauce, garlic, ginger, balsamic vinegar (contains sulphites), salt, sugar

Condiments: Chopped spring onions, toasted white sesame seeds, shredded seaweed
