We were on the road a lot in New Zealand and one of the perks was stopping by the many convenient stores and petrol stations to check out what they offer! I realised that pies are a staple for the Kiwis! Almost every store we stopped at offered an appetising array of pies, both sweet and savoury, big and small. One interesting pie that caught my eye was the butter masala chicken pie, perhaps a testament to the huge Indian migrant community in New Zealand, bringing with them their unique cuisine and culture. This butter masala chicken pie is a beautiful coming together of the different people and food, and embraced by the Kiwis all the same.
This SouperChef Special is my memory of the melting pot of cultures in New Zealand, a creamy tomato curry with warming spices, tamed with cream and butter.
