Christmas is for slowing down, for travel memories and for a delicate chowder like this. Many years ago, we went on a campervan road trip in Perth. My kids would play on the beaches and I’d cook this chowder for them with salmon, sweet potatoes, corn, spinach, quinoa and dill. It’s equal parts nutritious and nostalgic!
Ingredients: Salmon stock (water, salmon, root vegetables, herbs), salmon, sweet potatoes, sweet corn, fennel, dill, spinach, cream, quinoa, red onion, salt, pepper
Condiment: Dukkah (roasted almonds, cumin, coriander, sesame seeds)
