Have you ever looked back on some of your travels and find yourself pulled into the memories, so light-hearted it’s like dancing inside a holiday carol? Tuscany does that to me! I have long dreamt of visiting this impossibly charming part of central Italy and I’ll always remember the year this dream came true for me! Back in 2012, I spent a week staying in Lucca, a medieval town one hour from Livorno and Pisa. There, I walked on charming cobbled streets, drank a copious amount of coffee, feasted on the heartiest of stews. Apparently, if you step into any Tuscan home around mealtime, you’ll find yourself navigating the folds of the house into the kitchen where a soup or stew will almost always be gently bubbling.
In our kitchen, it begins with the freshest harvest of Kühlbarra’s barramundi fish, coaxed with the help of aromatics, fresh herbs, oranges, Great Northern beans and more. We hope this rich, flavourful stew with that gorgeous red hue will be a Christmas memory that will always warm you.
Ingredients: Fish stock (water, barramundi bones, carrots, onions, leeks, herbs), Kühlbarra barramundi fish, onions, tomatoes, potatoes, carrots, leeks, fennel, celery, Great Northern beans, oranges, fresh herbs, paprika, Worchestershire sauce (contains anchovies), salt, pepper
