Yuletide Chicken Stroganoff

I love it when inspirations beget inspirations! This Chicken Stroganoff for Christmas is a spin-off from our Beef Stroganoff Brazilian Style hailing from the Taste Brazil campaign earlier this year, and I’m souper stoked to bring it back, in a brand new yet familiar way! You might already know from then that the beef stroganoff is almost a national dish in Brazil, so well-loved that in the 80s, it was a popular favourite at weddings, served in a buffet style on classy silver chaffing dishes. The original Russian recipe is made with onions, butter, mushrooms, beef slices, sweet wine and sour cream and served with potatoes or pasta. The Brazilians have spruced up this classic with their rendition, adding tomatoes, tomato sauce (ketchup), Worcestershire sauce, cognac, mustard and preserved champignons instead of fresh mushrooms and sometimes speck. Cream is also added instead of sour cream and is always served with steamed rice and chips (or potato sticks).

Ingredients: Marinated chicken thigh, carrots, potatoes, tomatoes, button mushrooms, penne pasta, zucchini, onion, garlic, mustard, Worcestershire sauce, cream, chestnuts, white grape must, lemons, corn flour, salt, sugar, black pepper, herbs and spices.
Condiment: Cranberry sauce.
