Both my children are immensely fond of their nanny, a wonderful cook who is equally adept at traditional favourites and fusion food. My daughter particularly loves her Javanese non-spicy chicken stew, braised in coconut milk with candlenuts, kaffir lime leaves, turmeric and lemongrass. This SouperChef Special draws inspiration from her traditional recipe, with tempeh and eggplant. Such nostalgic memories!

Ingredients: Chicken stock (water, chicken, root vegetables, herbs), marinated chicken, potatoes, carrots, zucchini, cauliflower, leek, tomatoes, coconut cream, beancurd, French beans, eggplant, tempeh, sharksfin melon, round cabbage, vermicelli, shallots, candlenuts, ginger, galangal, lemongrass, turmeric, white pepper, daun salam, kaffir lime leaves

Condiments: Homemade chilli, chopped Chinese celery leaves, fried shallots, lime wedge
